Vegan Samoa Cookies

If you’re convinced there’s nothing better than a Girl Scout Samoa Cookie, but you really wish there was a healthier, gluten-free alternative, then you have come to the right place! I was a Girl Scout (once upon a time) and did my fair share of eating and selling hundreds of boxes of their cookies. Samoas were always my favorite. Now that I’m vegan, I knew it was time to create a my version of this childhood staple.

Vegan + Gluten-free Samoa Girl Scout Cookies

2 Spotty Bananas

1 Cup Unsweetened Coconut Shreds

2 Tbsp Gluten-free Flour

1 Tbsp Coconut Oil

1 Cup Vegan Chocolate Chips

How To:

Preheat oven to 350°F. In a medium sized bowl, mash bananas. Next, stir in coconut shreds and flour. Line a cookie sheet with parchment paper. Form cookies and create a hole with your thumb. Bake for 20 mins or until brown.

In a small saucepan, melt coconut oil on low heat, then add in vegan chocolate chips. Drizzle chocolate over your cookies. Enjoy!
