Single Serve Cinnamon Roll (no yeast)

Cinnamon rolls are so delicious, but the time it takes to make them often seems daunting. As a mom of two now, I hardly have a moment to make a meal much less a batch of cinnamon rolls. But they’re so delicious. What to do??

Then, I had a lightbulb moment! What if I used a simpler recipe and made just one? That could be easy enough! I did a Live on Tiktok sharing my recipe last month and it turned out so gooey and delicious. The best thing about having just one is there’s no temptation to go back for seconds. ;)

Single-Serve Cinnamon Roll

Recipe:

*Dough

1 Cup Gluten-Free Flour

1 Cup Unsweetened Coconut Yogurt

1 tsp Baking Powder

2 Tbsp Coconut Sugar

1 Tbsp Cinnamon

1 Tbsp Coconut Oil

*Icing

2 Tbsp Monkfruit Powdered Sugar

1-2 tsp Nut Mylk

How To:

Preheat oven to 350°F. In a medium bowl, mix together the gluten-free flour, coconut yogurt, coconut sugar, and baking powder. Roll the dough out long ways so that it is about 2.5 inches wide. Glaze the top with coconut oil and sprinkle on the coconut sugar and cinnamon. Roll the dough all the way up to form your single cinnamon roll and place on baking sheet. Be sure to use parchment paper, so it doesn’t stick. Bake for 18 mins or until brown on top.

In a small bowl, mix the Icing ingredients and drizzle on top. Enjoy!
